Mary Martini, CM Cooking School Manager (For Ages 18 & Up) HANDS-ON. BASICS, You’ll make fresh ricotta and then incorporate this luscious cheese into: Ricotta Crostini with Salsa Verde; Baked Ricotta with Caponata; Baked Pasta with Smoked Mozzarella & Fresh Ricotta; and Chocolate Chunk Cannoli with Fresh Ricotta. $60 CLASS TIME: 11 AM – 1:30 PM Students must dress with safety in mind. Please wear completely closed shoes, no sandals. Long hair should be pulled back and up.
