CLASSIC SAUCES 101 Steve Wegner, CM Cooking School Instructor (Ages 18 & Up) HANDS-ON. Learn the basic techniques used to make the classic Mother Sauces and sample them in traditional dishes like: Roasted Fish with Tarragon Velout é Sauce; Braised Pork Shoulder with Espangole Sauce; Seared Flank Steak with Béarnaise Sauce; and Braised Chicken in Tomato Sauce. 11AM-1:30PM $60 Students must dress with safety in mind. Please wear completely closed shoes, no sandals. Long hair should be pulled back and up.
